Hilda Baci and Gino Nigeria produced 8,780 kilograms of Nigerian-style jollof rice at an event on Victoria Island, Lagos, in September 2025. Guinness World Records confirmed the achievement in a report published on 15 September. It was a record for the serving's size, separate from Baci's earlier endurance cooking.

The enormous pot held ingredients on an industrial scale. Guinness listed 4,000 kilograms of washed basmati rice, 164 kilograms of fresh goat meat and 600 kilograms of Baci's pepper mixture among the inputs. Those ingredient weights describe preparation, rather than additional finished servings to add to the certified total.

Baci said the cooking took nine hours and credited teamwork. She also reported that the food supplied 16,600 plates. That plate count was her account of the distribution; the record measurement reported by Guinness was the finished serving's weight of 8,780 kilograms.

Feeding people was part of the event's organisation. Guinness said the rules required the food to be distributed without waste. Thousands attended the Lagos gathering, which included performances, and the rice was served to the crowd after the cooking rather than remaining only a display.

The achievement followed Baci's May 2023 cooking marathon in Lagos, certified at 93 hours and 11 minutes. The two projects tested different abilities: sustained cooking in one case, and coordinating a very large batch in the other. Both required planning beyond the public spectacle.

Jollof is shared across West African food cultures, with different national and household preparations. The 2025 record documented one Nigerian-style serving's scale. It did not settle which country's recipe tastes best; its concrete legacy was the measured dish and the people it fed.
